Blanc de Noirs by Lallier is a 100% Pinot Noir, with a blend, for 90%, of wines of the current vintage and, for 10%, of reserve wines. Its vinification takes place through an alcoholic fermentation made with Lallier yeast and a partial malolactic fermentation. Its disgorgement takes place 4 months before distribution. Blanc de Noirs, like the other Lallier Champagnes, is produced through environmentally friendly viticulture, without the use of insecticides and only through mechanical processing of the soil, to guarantee the quality of the final product.

Since 1906, the quality of Lallier Champagne has been rooted in the heart of the village of Aÿ. The brand's heraldic shield, which embellishes the labels, symbolizes the Maison's roots. Since 1936 Aÿ has been one of the 17 villages classified as "Grand Cru" of Champagne, clear proof of the quality of the grapes that grow in this special place. The backbone of the territory is precisely the Lallier vineyard: 16 hectares of property provide 15% of annual production, while 80 hectares of vineyards belong to external collaborators (Montagne de Reims / Côte des Blancs).

An Entire Menu At Your Service

Blanc de Noirs by Lallier is appreciated alone, as an aperitif or together with a plate of fine cold cuts. During the appetizers it offers the best of itself with poached eggs cooked with Blanc de Noirs. Its main course can be a grilled beef steak while for dessert it will accompany, for example, a pear dried in red wine, with vanilla ice cream, cinnamon and blackcurrant cream.
